Sodium Metabisulphite is a bacterial inhibitor - great for putting in fermenters between uses to prevent mould, etc growing. Sodium Met is often used by brewers as a sanitiser, but is not as effective as a dedicated brewing sanitiser.
When using Sodium Met, be careful not to use in a confined place. Do not breath in the fumes. For people with asthma and other sensitivities, a liquid sanitiser is recommended.
